2 c all purpose flour
1/2 tsp baking soda
1 tsp baking powder
4 tbsp whole milk
1/2 coconut oil melted/softened
1 c mashed bananas
1 c semi sweet chocolate chips
Put all moist ingredients in a bowl, egg, milk, banana and coconut oil.
Put flour, baking soda, baking powder, salt on top.
Preheat oven to 350° F fan (convection oven if possible).
Mix together until thick and incorporated.
Fold in chocolate chips.
Spoon the mix into a muffin tray.
Place in the oven for about 30 minutes or until golden brown on top. Makes 12 muffins.
To do this more professionally, mix the sugar and the bananas first, then the rest of the wet ingredients. Also sift all the dry ingredients together before incorporating. I forgot to when I made this so that’s why it’s in the footnotes.
Also please consider using reusable baking cups, I used silicone because for some reason the paper ones keep shredding and sticking. I didn’t have to oil it extra as they pop right out really easily.
